MMM Homemade Salad Dressing

Last night, something amazing happened. This conversation says it all {via text}:

Me: Leaving work. Thoughts on dinner? I can run to the store.
T: Wanna grab chicken and have a salad?

At which point, I almost fainted on the train. MY husband wanted a SALAD for dinner. What was wrong with him?!

But instead of questioning, I stopped by our neighborhood grocery store & grabbed some ingredients – but did not grab dressing. Instead, I threw this random mix of ingredients into the blender and crossed my fingers that it would turn out (and that Tom wouldn’t immediately regret his dinner suggestion):

1/2 C extra virg olive oil
Just less than 1/4 C balsamic vinegar
1/4 diced red onion
3-4 garlic cloves, minced
orange zest (to taste)
dash of kosher salt
1 tsp sugar

30 seconds on high in the blender, and it was AMAZING! Not to brag, but I was pretty proud of my creation. So much, that I’m going to make another batch and bottle it. Maybe that will tempt us to eat dinner salads more?!

    Did the blender make it so the onion was just part of the flavor, or were there still little pieces in there? I like onion flavor but not PIECES of onion… 🙂
